If you don’t know it yet, India’s Bhut Jolokia Ghost chili is the hottest chili pepper on Earth. Although it is intensely hot (over 500 times hotter than the Tabasco) and just a pinch will make any meal inedible, culinary conquerors still whip up recipes to include this wonder in restaurant dishes. Its use, is of course, is always requested because you can’t force someone to gulp a death-defying piece of pepper, especially if that person is eating at your restaurant.
Most of the time, ghost peppers are used in restaurants as sauces to add a heap of heat to dishes, and the peppers used are usually watered down to reduce the heat of over 1,000,000 Scoville units. Indian restaurants have ghost chili sauce almost all the time, as if it is their version of the usual hot sauce. For other cuisines, ghost chili sauce is as rare as having a blowfish on the menu, simply for the reason that not all people can stand its heat. Some restaurants fuse their own recipes with the use of ghost pepper chili sauce, such as ghost pepper Buffalo wings where the coating sauce used is made up of honey and ghost chili sauce. Other basic restaurant recipes using ghost pepper chili sauce are mango Jolokia sauce (for salads and garnishing), ghost pepper crackers (bar food), and even in main entrees such as pork belly in ghost pepper sauce.
Some firehouse grills and specialty barbeque joints use ghost chili sauce all the time, in ribs and usual grill items. Although its use is well accepted in all cuisines, it’s the effect that’s not so acceptable. Those who have tried eating ghost pepper sauce say that the feeling is akin to ingesting battery acid and shards of glass, adding to the ballooning pressure inside the scalp. When you stumble upon a menu item with the words ghost, pepper and jolokia in it, think twice and make sure you have what it takes to eat the spiciest thing on the planet!
